Arugula Pesto: Remedy for Insomnia

Let’s say, for example, that you realized last night that you never finished Dexter, Season 6…you know, the one with the freaky religious themes. So, you watch the last three episodes right before bed. And then….completely unrelated…..you struggle with some insomnia. There’s probably zero relationship between the two…but you can’t stop thinking about serial killers, and the exorcism of Emily Rose, and that bizarre inference to incestuous feelings on Deb’s part?!!? Friends, if you ever struggle with insomnia of this nature…I submit to you that arugula pesto is the remedy.

Step One: Arise from bed, turn on NPR…something about the way that the BBC reporters use the term “sacked” as opposed to “fired” will make you smile, and will distract you from thinking about demon-possessed people. Enter your kitchen, and begin boiling water for coffee.

Step Two: Throw all of these things in a food processor: arugula, oregano, garlic, parmesan cheese, pine nuts and olive oil.

Step Three: Blend, pour into a bowl, and marvel that the Earth births something this fluorescent green.

Step Four: Pour yourself some coffee, mull over the menu for Sunday dinner with favorite out of town guest, and wait for the sunrise.
